Ingredients

    1 1/4 cups water
    1/4 fresh spinach, chopped
    1 egg, beaten
    1 1/2 tsp salt
    2 tsp sunflower or vegetable oil
    2 cups whole wheat flour
    2 cups all purpose or bread flour
    1/2 cup powdered milk
    1 1/2 tsp bread machine or instant yeast

Tips

If the pitas are too thick, they won't puff up nicely. If they are rolled too thin, they will puff up unevenly. Takes a bit of practice, but the results are worth it!


Directions

1. Measure all of the ingredients in the order listed into the pan of your bread machine. Select the Dough Cycle.
2. When the cycle is finished, turn the dough out onto a lightly floured board, and let it rest, covered, for 10-15 minutes. Meanwhile, heat the oven to 450°F (230°C).
3. Roll the dough into a long tube and cut into 16 equal pieces. Form each ball into a ball, then flatten it into a circle. Roll each circle out into a 6-8" circle approximately 1/8" (3 mm) thick.
4. Bake the pitas, 2-3 at a time, for 3-4 minutes. While one set is baking, roll out the next set. Remove the pitas from the oven and stack them on a plate. Keep them wrapped in a towel while they cool.
