Ingredients

1lb Italian sausage (hot sausage if you prefer)
1lb frozen shrimp
mixed veggies (broccoli & zucchini)
1 cup rice
1 cup lentil
2.5 cups chicken broth
2 diced tomatoes
1 diced onion
1 tsp turmeric (for color)
2 tsp Ancho chili powder
2 bay leaves
optional: hot sauce to taste
Tips
My 1 year old loves this paella...cut everything into small pieces while prepping and let the kids go to town when it's done!
If you prefer to use frozen veggies over fresh, add them when you add the shrimp instead of when sautéing the sausage.
Directions
slice and pre cook sausage
Add in veggies and simmer until soft.
Add in seasonings (1tsp tumeric, 2 bay leaves and 2 tsp ancho chili powder) and chicken broth, along with rice and lentil.
Cover and simmer until rice and lentils are soft. 20-40 minutes depending on your rice.
Add in frozen shrimp and simmer until heated through.
