Ingredients

1/2 cup stone ground corn meal
1/2 cup gluten free flour (I like the flour blend found here: www.sarahbakesgfree.com/2012/05/sarahs-gluten-free-flour-blend.html)
2 tsp baking powder
1/4 tsp salt
3 TBS total of Stevia/Stevia and Sugar blend/Sugar
3/4 cup unsweetened plain Almond Milk
1 egg
1/4 cup coconut oil
Tips
This smaller 8 inch skillet will feed 4 people generously. For more people, use a 10 inch skillet and double the recipe.
Directions
Preheat oven to 400 degrees. Place 1 TBS coconut oil in an 8 inch cast iron skillet and allow to heat up as the oven heats.
Whisk together all of the dry ingredients including: corn meal, gluten free flour, baking powder, salt and sugar/stevia.
Whisk together all of the wet ingredients including: almond milk, egg and coconut oil.
Add the wet into the dry and whisk to combine. Pour the batter into the hot skillet; the batter will sizzle and begin to cook. Place in the oven and bake until brown and cooked through.
Serving Size: Makes 6 slices
