Introduction

Ingredients

    1 Thomas' English Muffin, multigrain (100 calorie) or 2 slices light bread
    2 slices center cut bacon, cooked
    1 large egg (cook with cooking spray)
    1 Tbsp low fat mayonnaise
    tomato slices (2 thin slices)
    lettuce
    salt & pepper to taste

Directions

Cook bacon in non-stick skillet. Wipe skillet and spray with cooking spray and cook egg. Toast english muffin. Assemble sandwich by placing 1/2 tbsp of mayo on each side of the muffin and layering with tomato, lettuce, egg and bacon. Enjoy.

Serving Size: Makes 1 breakfast sandwich
