Ingredients

    Lentils, 1.5 cup
    Dry Beans, red kidney, 1 cup
    Tomato Sauce, 1.75 can
    *365 Organic Diced Tomatoes, 1.75 can
    1 Bell Pepper (Red), chopped
    1 onion, chopped
    Butter, unsalted, 2 tbsp
    Almond Milk - Silk Original, .5 cup
    Chicken Broth, 2 cup
    1-2 c water
    *Cumin seed, 1 tsp
    Garlic, 3 cloves, minced
    Oregano, ground, 1 tsp
    Salt and pepper, to taste

Tips

Serve with rice, couscous, or over chopped cauliflower!


Directions

Soak beans overnight. Drain and rinse and add to slow cooker. Add the rest of the ingredients, except for the salt. I added 3 cups broth/water. Depending on the consistency you are looking for, you can add more or less. Cook on low for 6-8 hours. The longer you cook it, the softer the beans will be. Add salt when you are almost ready to serve. Adding the salt right away will keep the beans from getting soft. Enjoy!
