Ingredients

    1 lb ground turkey
    2 packages frozen chopped spinach, thawed and all liquid drained and squeezed.
    4 eggs
    1 large onion, chopped.
    1 c old fashioned oats
    1 c parmesan cheese
    1-3 TBSP creole seasoning
    1-3 tsp cayenne pepper
    garlic salt to taste

Directions

Combine all ingredients. Form into balls or patties. Bake at 450 for 15-20 minutes (until crisped on the outside). Serve with sour cream (optional)

Serving Size: makes about 40 raquet ball sized balls. 4-5 are a serving.
