Ingredients

    3 slices leftover ham (from Easter)
    1 package 90 second wild rice
    1/4 red pepper
    1/4 small red onion
    1 roma tomato
    1 clove garlic
    parsley
    1/2 cup reduced sour cream

Directions

Warm the ham.
Cook the onion, pepper, garlic, and tomato.
Through in the warmed rice.
Scoop in 1/2 cup sour cream.
Top with chopped parsley.
