Ingredients

    24 ounces of cooked shredded chicken
    1 cup salsa
    1 can tomato soup
    1 cup unsweetened almond coconut milk
    1 small onion chopped
    6 6" mission low carb tortillas cut into bite size pieces
    2 cups cheddar cheese divided

Directions

Combine all ingredients with 1/2 of the cheese. Place in a baking dish and cover. Bake on 400 for 40 minutes. Remove, uncover, and cover with the remaining cheese. Bake an additional 5 minutes until the cheese is melted.
