Ingredients

    1/2 cup diced yellow onion, 3 cloves crushed garlic, 2 tsp. extra virgin olive oil, 3 cups sliced baby carrots, 4 diced celery stalks, 3 small diced and peeled turnips, 7 cups low sodium vegetable broth, 2 large diced tomatoes, 1 cup dry cannellini beans, 1 cup dry pinto beans (or any other dry bean you have on hand), 2 bunches sliced kale, 1 diced zucchini, 1 cup sauerkraut, 1/2 can Hunts zesty pasta sauce (or something spicy close to it), 1 tsp. dried thyme, 1 tsp. salt, 1 tsp. black pepper, 2 bay leaves, 1 cup red wine.

Tips

You can use any dried bean or mixed bean,subtract the wine,add cilantro or parsley. With the dry beans it does take a long time, but the house smells so good!


Directions

Put all ingredients in slow cooker. Heat on high for 2 hours. Heat on low for 8-10 hours or until beans are tender.
