Ingredients

1.5 cups gluten free flour mix
.5 cup sweet rice flour
.5 tsp xantham gum
4 tsp baking powder
1 tsp cinnamon
1/4 cup Truvia or Splenda sugar blend
1 large banana mashed
2 TBSP coconut oil
1 cup 1% milk
1 tsp vanilla extract
2 large eggs
3/4 cup chunky applesauce
1/4 cup sliced almonds, chopped further
1/4 cup raw sugar
Directions
Preheat oven to 350 degrees.
Mix dry ingredients together first (leaving out almonds and raw sugar). Mix banana, coconut oil, eggs, milk and vanilla extract together separately. Once mixed add to dry ingredients. Add applesauce. Pour into muffin pan (makes 12 muffins). Chop sliced almonds and mix with raw sugar - then sprinkle over each muffin. Bake for 30 mins at 350 degrees F.
