Ingredients

    3 lbs. Lean Ground Chuck
    2 Large Onions
    1 Small stalk celery
    1 Bunch of carrots
    10 oz. Bottle Worchestire sauce
    35 oz. Bottle Catsup
    2 Lemons sliced (remove seeds)
    1 pt. Good burgundy wine
    1 cup White vinegar
    1 tsp. Ground allspice
    1/4 tsp. Ground cloves
    1/4 cup Sugar (or to taste)
    2 tbsp. Salt
    2 tsp. Ground black pepper
    1/4 cup Dry sherry
    14 oz. Ginger snaps
    64 oz. Beef stock
    8 Hard boiled eggs peeled and chopped

Tips

Have found that leaving the soup set in the refrigerator overnight enhances the flavor.


Directions

1. Grind ginger snaps, onions, celery, carrots. Chop hard boiled eggs and set aside. Slice and chop up lemons. (deseed lemons-seeds will make the soup bitter)
2. Brown meat in a large three gallon or larger stock pot.
3. Add spices, onions, carrots, celery, lemons, salt and pepper.
4. Add beef stock and one gallon water and bring to a boil.
5. Cook about 1 1/2 hours or until vegetables are soft. Add ground ginger snaps and stir out the lumps. Add ground hard boiled eggs.
6. Reduce to simmer for 3 hours stirring occasionally.
