Introduction

Ingredients

    1 C. Egg Beaters
    13 oz. 2% Cheddar Cheese
    1 can nonfat Evaporated Milk
    1 T. flour
    1 small can Red Enchilada Sauce
    8-10 Green Chiles, roasted, peeled, and diced

Tips

You can use Green Enchilada Sauce or Salsa over the top, if you prefer. Is really good with salad, refried beans, and spanish rice.


Directions

Preheat oven to 350 degrees. Spray 9' X 13' glass pan with nonstick spray. Mix Canned Milk, Egg Beaters, and Flour together in medium size bowl. Set aside. Line pan with chopped green chiles; spread cheese over the top; pour Egg Beater mix over all. Finally pour red enchilada sauce (or green enchilada sauce) over the top. Bake for 30 min; let stand for 10 minutes.
