Introduction

This is very good salad that I've come up with. Low in calories and very delicious. This is very good salad that I've come up with. Low in calories and very delicious.
Number of Servings: 6

Ingredients

    Water, tap, 1.5 cup
    Whole Grain Quinoa 0.75 cup
    3 Mango, raw
    Cucumber 2 small
    1 large Red Bell Pepper
    Spinach 1 cup

    Dressing:
    Lime Juice 2 TBsp
    Fish Sauce 2 Tbsp
    Garlic, 2 clove
    Ginger Root, 2 tsp
    1 small Shallot
    Olive Oil, 1 tbsp

    Salt and Pepper and fresh parsley (optional)

Directions

1.In a medium soucepan, bring the water and quinoa to a boil. Reduce to a simmer, cover and cook for 13 minutes. Remove cover and cool completely.
2. Slice all the veggies thinly.
3. Place cooked quinoa in a medium bowl with mango, cucumber, red pepper, and shallot.
4. In small blender mix all dressing ingredients.
5. Mix dressing with quinoa/veggie mix and add spinach.
