Introduction

Ingredients

    Cut three roasted chicken thighs into cubes
    One box of Pacific Organic Low Sodium Chicken Broth
    One bunch of baby bok choy rinsed and cut up
    1 cup of cooked brown rice
    1 teasp minced garlic
    1/2 teasp Cavender's Greek Seasoning
    2 lemons - 1.5 teaspoons of lemon zest and juice of both lemons
    Celtic sea salt
    1 Knorr Chicken Bouillon cup (2 teasps approx.)

Tips

The Lemon Thighs contained a lemon and mustard rib when originally made which added to the exquisite lemon flavour.


Directions

Place broth in soup pot. Add lemon and zest. Add chicken cubes. Add garlic, and seasonings. Once heated, add the rice and the Knorr chicken bouillion and heat 'til boiling. Turn down and simmer for 15 minutes to blend flavours
