Ingredients

    3 medium onions, sliced
    8 celery stalks diced
    1 28 oz can of tomatoes crushed
    1 10 oz can diced tomatoes with green chilies
    2 Tbsp minced garlic
    1 15.5 oz can of Light red kidney beans
    1 15.5 oz can Black beans
    1 cup frozen corn
    2 5.5 fl oz cans V8 original - Low Sodium
    30 oz - Chicken breasts, skinless/boneless, chopped bite size
    5 Tbsp fajita seasoning mix - homemade**

    Thickener
    2 Tbsp corn starch
    1/4 cup cold tap water

Tips

This is great served over tortilla chips in a bowl topped with finely shredded cheese and hot-sauce.


Directions

Put all ingredients up to THICKENER in the crock pot. Mix well and cook on high for 4 hours or low or 7-8 hours.

THICKEN: right before serving by mixing 2 Tbsp of cornstarch in 1/4 cup of cold water, stirring until well dissolved. Then drizzle over mixture in crock pot and stir well. Heat on high for a few minutes until mixture thickens then serve,.
