Ingredients

1.5 cups of corn meal
0.25 cup of oat bran
0.25 cup of NOW Pea Protein (unsweetened)
1 tbsp coconut four
1.25 cups of milk (nutrition info for whole milk)
1 tbsp white vinegar
2 large brown free range eggs
3.5 tbsp of unsalted butter
0.5 tsp salt
1.5 tsp baking powder
1 tbl granulated sugar
Tips
The vinegar is included to make the milk like buttermilk. Warm the milk a bit and stir the vinegar in. Set aside while combining the other ingredients. You can skip the vinegar and this step if you wish.
Directions
Preheat oven to 375.
Mix dry ingredients.
Mix wet ingredients.
Mix wet ingredients into dry ingredients.
Spoon into muffin tin.
Bake at 375 F for 28 minutes.
