Introduction

Ingredients

    2 tbsp. Olive Oil
    8 cups Chicken Broth
    5 cups Kale, stemmed and chopped
    3 cups Mushrooms, sliced
    1 cup Onions, chopped
    1 block (1 pound) Tofu, firm
    4 cups Bok Choy, chopped
    1 can Coconut Milk, lite
    4 tbsp. Red Curry Paste (A Taste of Thai brand)
    1/4 cup Soy Sauce

Tips

Do not shred the bok choy. Instead slice the stems and roughly chop the greens, keeping them as separated as you can.

Make sure to remove the stems from the kale and wash it well.


Directions

In a large pot heat the olive oil. Add the onions and mushrooms and cook until soft. Add the stems of the bok choy and cook for 3-4 minutes. Add the chicken broth, and soy sauce, and bring to a simmer. Add the bok choy leaves, along with the kale and simmer for 10 minutes. Meanwhile dice the tofu and add. Stir in the coconut milk and curry paste. Cook 10 minutes longer or until the kale is tender.

Serving Size: makes 12 1 1/2 cup servings
