Ingredients

    Quaker Oats Old-Fashioned Rolled Oats, 1 cup
    Quaker Oats Old-Fashioned Rolled Oats, 1.5 cup (processed into flour)
    *Bisquick - Reduced fat - 1/3 cup, 0.33 cup
    Baking Powder, 2 tsp
    Baking Soda, 1 tsp
    *Kosher Salt, .5 tsp
    Cinnamon, ground, 1 tsp
    *Molasses, blackstrap, .25 cup
    Honey, 2 tbsp
    Egg, fresh, whole, raw, 2 large
    Cider Vinegar, .5 tbsp
    Apples, fresh, 1.5 small
    Unsweetened Vanilla Almond Milk, .5 cup
    Whole Ground Flax Seed Meal, .5 cup

Directions

Process 1.5 cups of whole oats in a food processor until fine flour forms. Mix oat flour, rolled oats, flax meal, bisquick mix, baking soda, baking powder, salt and cinnamon in a large bowl.

In a seperate bowl, beat eggs with molasses and honey. Add a little cider vinegar to the almond milk and whisk into egg mixture. Pour wet ingrediants over dry and stir lightly to combine. Fold in chopped apples.

Fill 12 muffin cups and bake at 350 for approx. 20 minutes. Do not overbake.
