Introduction
I randomly came up with this one night when I was short on time and looking for a fast, healthy dinner. The great thing is that you can make each "pizza" differently. It's totally customizable, healthy if you make it that way, easy, and yummy! Half the recipe, one "pizza" would also make a great snack! Ingredients

1 English muffin
1/4 C Protein Ranch
Fresh baby spinach
1 clove garlic, minced
1 slice onion, minced
2-4 tomato slices
Turkey pepperoni
Canadian bacon
1/2 oz. part skim mozzarella
1/2 oz. reduced fat feta crumbles
*The ingredients of this are super-flexible. Experiment and make it your own. This is just what I typically use for toppings.
Tips
The Protein Ranch I use for the sauce is super simple. It is 1 cup of cottage cheese, 1/4 cup milk or water (I use milk) and 2-3 tsp. of dry ranch dressing/dip mix. Throw it all in a blender and blend until smooth!
Directions
-Preheat oven to 350 degrees.
-Line a baking sheet with tinfoil and spray with cooking spray.
-Split an English muffin
-Spread Protein Ranch on each side of muffin
-Top with desired toppings
-Finish it off with cheese (I don't use a lot of cheese as the veggies and ranch give it tons of flavor)
-Bake for around 20 minutes (just keep checking on it until it is your desired done-ness)
-Let cool a few minutes, sink your teeth in and enjoy!
