Ingredients

1 cup quick-cooking oatmeal
1/3 cup butter, melted
2/3 cup unsweetened applesauce
1 1/3 cup boiling water
3/4 cup unpacked brown sugar
1/2 cup white sugar
2 eggs
1 1/3 cup flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
2 medium Granny Smith apple, diced
2 Tbs liquid honey
Tips
Add more or less spice to your taste.
Leave off the honey if you want.
Substitute whole wheat flour for all or part of the flour.
Directions
Boil the water and heat the butter and applesauce until the butter melts.
In a large bowl, mix together the water, butter/applesauce mixture, and the oatmeal. Let cool slightly. Mix in slightly beaten eggs.
In a medium bowl, mix together all dry ingredients. Once thoroughly mixed, add diced apples and stir to coat.
Mix the wet and dry ingredients until just blended. Pour into a 9 x 13 pan that has been sprayed lightly with cooking spray.
Drizzle the top of the cake with liquid honey. Bake at 350 for 25 - 30 minutes.
Serving Size: makes 12 squares from a 9 x 13 pan - smaller squares = lower calorie count!
