Ingredients

    1 navel orange (including peel) cut into eighths
    0.5 cup trop 50 (orange juice)
    1.25 cup cholesterol free egg substitute
    .25 cup coconut oil
    1.5 cup gluten free all purpose flour (I use Bob's Red Mill)
    1 cup splenda essentials plus fiber
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    0.75 cup 50% reduced sugar craisins

Tips

for only 10 calories more per muffin, enjoy them with Polaner all fruit sugar free jam.


Directions

preheat oven to 350 degrees

coat muffin tin with cooking spray

cut orange into eighths

place wet ingredients in blender and blend until smooth

whisk dry ingredients together in a large bowl

make a well in dry ingredients and pour in wet mixture. stir until well mixed.

fold in cranberries.

fill 12 muffin cups almost full.

bake 20-25 minutes.

cool and enjoy.
