Number of Servings: 1

Ingredients

    2 Whole Wheat Slices
    American Cheese Slice
Giardinera (by the spaghetti sauce in the store, hot peppers and veggies in a seasoned oil)
1/2 to 1 tbsp of country crock
    1/2 cup fresh spinach
    2-3 slices of tomato
1 tbsp fresh chopped onion, (or a couple sprinkles dehydrated onion if lazy)
A dash of Mrs. Dash Spicy
Can of tomato soup (make with milk and sprinkle garlic pwdr, pepper & tabasco! if you want..)

Directions

Makes an exciting lunch for one bored dieter!

Start out by dropping rinsed spinach leaves into warmed non-stick skillet, med. heat. Add tomato slice(s), your version of onions, and a dash of Mrs. Dash Spicy. You're doing this to wilt and warm the spinach and tomato a little, so your cheese has a better chance of melting once on the bread!
While the veggies warm, spread the Giardinera (the yummiest part) on one slice of bread. Unwrap the cheese and put it on the other.
Flip the tomatoes.
Start your can of tomato soup the way the can says to. Add dashes of garlic pwdr, pepper, and tabasco if brave (like me!)
Scoop veggies out onto bread and close the sandwich. Now that the skillets empty, "phwop" about 1/2 that tbsp of butter onto it, let it melt to a puddle the size of the bread, and put your sandwich over it. Brown about a minute and a half on low heat, and repeat procedure for the other side.
Serve yourself the soup and sandwich together, and don't be afraid to try dipping!
