Ingredients

    1 Package skinless bonelss thin chicken breasts
    1 28 oz can diced tomatoes (undrained)
    2 cans low sodium black beans (drained & rinsed)
    1 can no salt added yellow corn (drained)
    1/2 cup organic mild salsa
    1 can green chiles (undrained)
    1/2 cup water
    1 taco packet



Tips

Can add toppings such as sour cream, cheese etc.
I LOVE to have a few multi grain scoops tortilla chips with mine! Enjoy! :)


Directions

Add all ingredients to crockpot cook on high until chicken is fully cooked.
Remove chicken from crockpot and shred (I shred this in my kitchen aide mixer, done in SECONDS and has to be done while chicken is still hot)
Once chicken is shredded place back into crockpot and leave on low or warm until ready to eat.
