Ingredients

    2 avocados
    1 mango
    1 can no salt added whole kernel corn
    1 can low sodium black beans
    1 lime
    2 Tbs. Cilantro

Tips

I love this so I eat big potions but you could always divide it into smaller portions to have less calories. I serve mine with organic blue corn tortilla chips. There are many substitutions and additions that can go with this. I add pineapple, garlic powder and hot sauce sometimes. This would also be good with some chicken on a wrap. Or you could just eat it by itself.


Directions

Scoop out avocado and cut into small chunks, cut peeled mango into small chunks, drain corn, drain and rinse black beans. Combine all ingredients into bowl. Juice the lime over top of all the ingredients in the bowl. Toss until lime juice is evenly distributed. Top with chopped cilantro. Serve with tortilla chips.
