Ingredients

    - black beans ( I used a whole jar of Central Market Organic Low Sodium Black Beans): 455 grams, pre-cooked
    - 3 large potatoes
    - 1/2 onion
    - 2 cups of baby spinach
    - 1 tbs freeze dried dill
    - 2 eggs
    - 2 tbs olive oil (add to pan to cook later)

Tips

You can also bake the ingredients and get a vegetarian casserole. Squeeze the juices out and put the contents in a baking tray, and bake for 10 minutes at about 170-200


Directions

Run the potatoes and 1/2 onion through a cheese grater and put in a large bowl. Add the pre-cooked beans, dill, and eggs to the bowl. Cut up the spinach into small pieces and add that, too. Mix everything in the bowl and prepare a pan by adding a bit of olive oil and preheating it.
Grab a handful of the contents and squeeze over sink to get the juices out (burger will not stick together if it's not dry) Then, place it on the pan and do the same for as many as can fit on the pan. Add a bit more oil if necessary. Turn over and continue cooking until both sides are a crispy light brown.
