Ingredients

    1 T soy sauce
    1 T hoisin sauce
    1 c warm water
    1 T cornstarch

    1 T sesame oil
    1 T garlic, minced
    1 T ginger, minced
    1 t Thai hot sauce
    1 pound small potatoes cut in chunks
    3 red bell peppers
    1 pound boneless skinless chicken breast
    2 cups of baby spinach, shredded

Directions

Mix soy sauce, hoisin sauce, water and cornstarch together and set aside.
Saute garlic and ginger in the sesame oil.
Toss in chicken cut into bite-sized pieces and stir fry until just cooked through. Remove chicken from pan and set aside.
Add potato chunks to pan and cook until tender crisp, then add strips of red bell pepper and continue cooking until potatoes are cooked through and peppers are soft.
Add chicken to pan and stir fry for 2 or 3 minutes, then add sauce mixture and stir until thickened.
Stir in spinach just before serving and heat until just wilted.
