Ingredients

    2 tbsp olive oil
    1 c finely chopped celery
    1 c finely chopped onion
    1 c finely sliced carrots
    1 tbsp sun-dried tomato and herb seasoning
    1 tbsp roasted garlic seasoning
    ( seasoning is from the Blue Menu brand)

    put all the ingred is a sauce pan and saute until soft, then add the following ingred:

    8 ripe tomatoes, skinned and chopped
    1 can mushrooms
    1 can hunts tomato paste
    1 tbsp white sugar
    1 cup water
    stir all together, cover and simmer on low for 30 minutes

Tips

you can divide this up into personal size servings and freeze, or but in jars and seal.
