Ingredients

    12 oz. pkg. Jimmy Dean 30% less fat pork sausage, cooked
    1 c. onion, diced
    1 half red bell pepper, diced
    3 slices American processed cheese, 2%
    1 c. heart smart Bisquick mix
    1 c. Egg Beaters
    1 c. skim milk
    1/4 t. Nature's Seasoning
    1/4 t. black pepper

Directions

Brown sausage (breaking into smaller bits) with onion and red pepper. Place sausage and vegetables into a 9 x 13 inch pan which has been sprayed with nonstick cooking spray. Tear cheese into strips and distribute evenly across meat mixture. Blend eggs, milk and Bisquick together with spices and pour over the remaining ingredients in the baking pan. Place into a 400 degree oven for 30 minutes. Serves 8.

    Incredible!
    My family loves this. I added a can of rotel for some spice. It is easy to make and reheat in the morning. I make enough to last several days. Even my 5 year old eats this. - 1/9/10

    O.K.
    Too high in sodium. Will have to think about how to reduce the sodium without omitting the sausage. I think maybe I would also substitute turkey sausage for pork sausage but that is still pretty high in sodium. - 4/7/08
