Ingredients

    3 whole eggs
    375 g creamy vanilla yougurt
    375 ml corn meal #250
    60 ml canola oil
    15 ml baking powder

Tips

Serve for brunch, breakfast, healthy snacks. You can eat it with yogurt, fresh fruit or all on its own.
For a variation, pour batter in muffin tins for quick and easy muffins.


Directions

1) preheat oven to 375 F and prepare pyrex dish, 6" x 9".
2) beat eggs with hand held beater until frothy.
3) Add yogurt and beat until well incorporated.
4) Add oil and beat.
5) Add cornmeal (use #250) and beat until smooth...1 minute. Let stand 2 minutes.
6) Add baking powder and incorporate well into batter.
7) Pour batter into greased dish and bake in a preheated oven for 45 minutes (or until golden brown and tester comes out clean from center).
