Ingredients

    1 pound of boneless skinless chicken breast, cut into 1-in pieces
    1 garlic clove, finely chopped
    2 teaspoons ground ginger
    1 cup chicken broth
    3 tablespoons soy sauce
    2 teaspoons Splenda
    2 cups broccoli flowerets
    2 teaspoons cornstarch

Directions

Spray skillet with olive oil cooking spray. Cook chicken, garlic, and ginger over medium high heat for 2-3 minutes. Add 3/4 cup chicken broth, soy sauce, and Splenda. Cover and cook over medium heat for 5 minutes. Add broccoli. Cover and cook about 5 minutes more, until broccoli is crisp-tender. Mix cornstarch and 1/4 cup chicken broth, stir into chicken mixture. Cook, stirring frequently, until sauce is thickened.
