Introduction

This is a low carb adaptation of my normal veggie meatloaf recipe (this has close to 7g total carbs per slice). I just used broccoli (instead of potatoes, corn, peas and carrots) and almond meal/flour (instead of 2-4 cups cubed bread soaked in 3/4cup evaporated milk). My hubby and kids (7+2 yrs old) like it! Ingredients

    2# Jennie O Ground Turkey 90 percent lean, (32 oz)
    2 large eggs
    1 tsp Dry Mustard
    1 12-oz bag shredded broccoli slaw (broccoli, carrots, red cabbage), shredded***
    1/4 cup almond meal/flour, Bob's Red Mill
    1/2 cup Kraft 100% Grated Parmesan Cheese
    1/4 cup Tone's Minced Onion (dehydrated)
    1 tsp Tone's Italian Seasoning
    1 Tbsp Worcestershire sauce, Lea & Perrin's
    1 Tbsp squeezable minced garlic
    1/4 cup Tillamook Shredded Medium Cheddar Cheese (to top with)

    **(steamed in microwave until as soft as you like--I did 6 mins)

Tips

Use a standard bundt pan for easy serving and portion control!


Directions

preheat oven to 350F

Mix with hands to combine all ingredients except for the shredded cheddar.

Spray a standard bundt pan with Pam cooking spray and add meat mixture.

Sprinkle shredded Tillamook on top.

Bake for 1 hour.

Serving Size: makes 12 of the large slices from a standard bundt pan.
