Introduction

A nice spicy soup for those spring nights that still aren't warm enough for a salad! A nice spicy soup for those spring nights that still aren't warm enough for a salad!
Number of Servings: 2

Ingredients

    Half a large onion roughly chopped
    1 Tbs olive oil
    1 clove of garlic diced
    2 tsp ginger root
    3 medium carrots roughly chopped
    1 apple cored and chopped
    2 vegetable stock cubes
    600ml water

Tips

Serve with bread or a dollop of low fat sour cream and a sprinkling of thyme.


Directions

Saute garlic, onion and ginger in olive oil. Add remaining vegetables and stock. Bring to boil then simmer until the vegetables are tender. Allow to cool a little and puree until smooth. Add salt and pepper to taste. Serve.

Serving Size: Makes 2 large bowls. For a starter this could serve 4.
