Ingredients

2 Yukon gold potatoes
2 leeks
2 stalks of celery (great to use your wilted ones)
2 cans of chicken broth
1 can evaporated milk
Tips
I don't add salt of pepper to the pot, that's done upon serving. This dish may be garnish with a multitude of stuff, but I like to keep it simple. Great place to sprinkle a serving of Benefiber in.
Directions
Chop a vegetables into about 1 inch pieces, place in a pot with the chicken broth of your choosing and bring to a boil for about 20 minutes on until potatoes are tender. Pour about half of the mixture into a blender and puree to the desired consistency. Pour back into the pot, add the can of evaporated milk of your choice. Stir and serve.
