Ingredients

    3 cups coconut milk
    2 cups chicken stock
    2 Tbs red curry paste
    2 Tbs fish sauce
    2 Tbs brown sugar
    2 Tbs creamy peanut butter
    2+lbs chicken breasts, cut into 1 1/2 inch pieces
    1 red bell pepper, seeded and sliced into 1/4 inch slices
    ½ to 1 jalapenos, seeded and chopped (I only put ½ of 1 jalapeno)
    1/2 onion, thinly sliced
    1-2 tsp ground ginger
    1/2 tsp red pepper flakes (more to add spiciness)

    Add ½ hour before done:
    1 cup frozen peas (I used peas and carrots)

    Add just before serving:
    1 tablespoon lime juice

Directions

Put all ingredients EXCEPT for peas and lime juice in crock pot. Cook on LOW 7.5 hrs.

Add peas and cook 30 min more.

Just before serving add lime juice.

Serve over rice.
