Ingredients

    4 medium ripe bananas, peeled
    1/2 cup tropical trail mix (or chopped nuts)
    1/2 cup soft unsalted butter
    1 cup sugar
    1 Tbls lemon juice (half a fresh lemon)
    2 eggs
    2 cups unsifted flour
    1 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon
    zest of 1 lemon

Directions

Preheat oven to 350°.

Cream together butter and sugar. Add bananas one at a time. mix in remaining ingredients. Pour batter into greased (Pam baking spray) 9x5x3 loaf pan. Bake 55 minutes at 350°.
