Ingredients

1# Ground lamb
1 medium yellow onion, chopped
3 cloves garlic, peeled and minced
1 sweet medium sweet potato, peeled and cubed
2 cups chopped broccoli
1 cup black beans, drained
1 can lite coconut milk
2 Tablespoons Red Curry Paste, or to taste
1/2 cup water
Tips
Serve with whole wheat couscous, quinoa or whole wheat pita bread. Prep and cooking times are approximate.
Directions
Brown lamb in large skillet, drain and set aside. Brown onion and garlic in a small amount of the coconut milk in the same skillet, about 5 minutes. Add cooked lamb, sweet potato, broccoli and black beans, simmer for 20 minutes, adding water as needed to keep moist. Combine remaining coconut milk and curry paste, add to meat mixture and heat until just starting to simmer.
