Ingredients

    2 Tbsp spectrum coconut canola oil blend
    2 Tbsp low sodium soy sauce
    1/2 Tbsp rice wine vinegar
    1/2 Tbsp agave nectar
    1/4 cup water
    1 Tbsp corn starch
    1 package sweet earth seitan slices, strips, or ground
    2 cloves of garlic, crushed
    3 cups broccoli , chopped into florets
    1 jalepeno pepper, seeded and thinnly sliced
    1.5 cups shiitake mushmooms sliced into strips
    1 tsp fresh ginger root, grated
    1/4 tsp black pepper
    1 package KA ME Udon stir fry noodles


Directions

Heat oil in a wok or large skillet. Saute the garlic for about 2 minutes. Add jalepenos and ginger and cook 1 more minute. Add the mushrooms and cook 3~5 minutes until softening. Meanwhile, mix the water, soy sauce, agave, vinegar, black pepper and corn starch. Add the broccoli and seitan to the veggie mixture and stir fry about 5 minutes until broccoli begins to soften and the seiten browns. Add the udon noodles and cook 1 minute. Stir in the sauce and heat until bubbling and thick ~1 minute.
