Ingredients

    1/2 cup butter
    1 finely chopped onion
    1 cup sliced carrots
    1 cup sliced mushrooms
    1/4 cup Krusteaz pancake mix
    6 cups chicken broth
    5 cups cooked wild rice
    1/2 teaspoon mustard powder
    1/2 teaspoon dried parsley
    1/2 teaspoon ground black pepper
    1 oz Southern Comfort
    2 cups fat free sour cream

Directions

Sauté first 4 ingredients until onions are translucent. Stir in flour. Stir in seasoning and sour cream until sour cream is fully absorbed. Add Southern Comfort. Simmer 20 minutes.

Serving Size: makes twelve 2-cup servings
