Ingredients

    1 Cup Bulgur (cracked wheat)
    1.5 Cups Boiling Water
    1/2 Cucumber chopped
    1 Medium Tomato - Chopped
    3 Green Onions - chopped - including green
    3 Tbsp Olive Oil
    3 Tbsp Lemon Juice
    3 Tbsp fresh Mint _chopped fine

Directions

Mix Bulgur and boiling water in large bowl. Let stand until water is absorbed (about 45 minutes).
Once water is absorbed, add remaining ingredients and mix well. Tastes best after it has been refrigerated for an hour or so.
Makes 5 servings.
