Ingredients

    1 large Russet Potato diced into 1/2 inch pieces
    1/2 cup chopped onion
    8 eggs scrambles
    1 Tbsp olive oil for cooking potato
    4 Tbsp Parmesan cheese grated for top

Tips

Make sure potato is dried prior to placed in skillet will brown instead of steam. Use any oven proof 12" skillet, cast iron most effective.


Directions

Heat oven to 350 degrees. Dice potato into 1/2 inch pieces. chop onion. In cast iron skillet on high brown potato with olive oil, add onion continue to cook until potato is browned and firm. scramble eggs, add to pan continue to stove top cook until set on bottom. Place in pre heated oven 30 minutes or until golden brown. May add grated Parmesan cheese to on top half way through baking time.

Serving Size: makes 4 3 inch pie pieces
