Ingredients

    12 oz (1 pkg) shredded red cabbage
    1 avocado, cubed
    1 can black beans, rinsed
    1 6 oz can Herdez Salsa Verde
    2 tbsp olive oil (extra virgin)
    Juice of 1 lime
    1 tbsp wine vinegar
    1 tbsp mustard (dijon, brown, or stone ground)
    2 poblano peppers, roasted/charred, cored, and diced
    1 jalapeņo pepper, seeded and minced
    1 tbsp Valentina hot sauce
    1 tbsp chili powder
    1 tsp fresh cracked black pepper


Tips

Roasting the Poblano peppers is the only real cooking that needs to be done. Lightly coat them with vegetable oil and broil for about 2 minutes each side--expect some smoke to come out of the oven.


Directions

Combine all ingredients and serve.
