Introduction

Ingredients

180g Maize Meal
2 tbsp Coconut Flour
200 ml plain Greek yogurt
1 small Carrot grated
1/2 Courgette (or zucchini) grated
1/2 Bell peppers
1 medium Onions chopped
1 medium Chilli (optional)
1 tsp Cayenne pepper**
1 tsp Garam Marsala
1 tsp Cumin seeds
1tsp Ginger grated
1/2 Himalayan Salt
1.5 tbsp Coconut oil
1 tsp Bicarbonate soda
50g Pumpkin seeds
Tips
This will go nicely with a curry or chilli in place of bread or biscuits.
Or as a snack add some light cream cheese or avocado spread.
** Note if you don't want your savoury bread spicy omit the chilli peppers and reduce the cayenne peppers.
Directions
Preheat oven to 200°C and grease a rimmed baking loaf tin with cooking spray; set aside.
Mix all vegetables (chopped onions, bell peppers, chilli, grated courgette, carrots, & ginger) with spices with melted coconut oil.
Then add dry ingredients to the mix vegetable and spices.
Finally add the yogurt and bicarbonate soda and mix ingredients well until it resembles a soft dough. If too hard add a little water (about 2 tbsp) to mix.
Pour mixture into the greased pan and sprinkle the pumpkin seeds to garnish on top before placing in into the centre rack of the oven.
Bake for approximately 30 - 35mins until the knife comes out clean when inserted.
Serve warm or cold. Enjoy
