Ingredients

    6 c. old fashioned oats
    3/4 c. coconut oil, softened
    2 c. buttermilk, lowfat (can sub up to half with water)
    3/4 c. honey
    4 eggs, beaten
    4 t. baking powder
    1 t. kosher salt
    1 t. cinnamon

Tips

This can be made for freezer cooking. The blueberries could be swapped for raisins, apples, raspberries, or left plain.


Directions

Mix oats, buttermilk, oil, and honey and spread into a 13 x 9 inch baking dish. Let this mixture soak overnight on counter. In morning, preheat oven to 350 degrees. Sprinkle baking powder, cinnamon, and salt over the soaked oats. Pour the beaten eggs over and mix til combined. Add blueberries. Bake for 35 to 45 minutes or until top is golden brown.
