Ingredients

    White, medium grain rice - 4.5 cups cooked, day old
    Carrots, Raw, Diced - 1 cup
    Celery, Raw, Diced - .5 cup
    Onion, Raw, White, Diced - .5 cup
    Egg, Fresh, Large - 2 scrambled
    Wesson 100% Pure Vegetable Oil - 3 TBSP
    Kikkoman Soy Sauce - 3 TBSP
    Black Pepper - .5 tsp.

Tips

* optional to use scallions.
*Additional soy sauce may be needed depending on individual preference.


Directions

Steps:

1. Cook the rice the day before. Then the day of cooking, break up the rice to remove any clumps.

2. Place a pan or wok on med. high to high heat and add .5 TBSP of oil.

3. Then add the scrambled eggs and cook for about 1 minute. Don't over the eggs. Once cooked, remove from the pan.

4. Next, still on high heat, add the remaining oil and add the carrots and celery and cook for 1 minute.

5. Now add the diced onion, and then the rice. Toss the ingredients and cook for 5 minutes.

6. Now add the soy sauce and the black pepper for taste, toss to mix everything together. Cook for another 2-3 minutes.
