Summer in a bowl! Tastes best after sitting for a few hours or overnight. This can be a side or even a meal. Great leftovers for lunch. Look for low sodium tomato juice to reduce sodium even further. Ingredients

8 roma tomatoes, cut in half
1/4 cup olive oil
1/2-3/4 cup balsamic vinegar
2 tbsp tomato paste
1 tbsp taco sauce
2 cans tomato juice
3 green onions, sliced in small rounds
1/2 cucumber peeled and diced
2 med to large tomatoes, diced
1/2 large red bell pepper or 4 mini red peppers, diced
3 tbsp cilantro
Tips
Serve chilled, top with croutons, additional green onions and/or a few cold shrimp.
Directions
In large bowl combine chopped green onions, red pepper, cucumber and the two large diced tomatoes.
In food processor process tomatoes, olive oil and balsamic vinegar until smooth. Add tomato paste, taco sauce and salt/pepper to taste. Remove from processor and pour into large bowl with the diced veggies. Add two cans of tomato juice. Taste for seasoning and add additional balsalmic, salt and/or pepper as needed. Chill for about an hour.
