Ingredients

1/2 cup Pinto beans (cooked)
1/2 cut Brown Rice medium grain (cooked)
*1 1/2 tsp salt (optional)
1 tbsp Pace picante Salsa
1 tbsp chopped Cilantro
1/4 cup plain Greek Yogurt
1/2 oz Kirkland Organic Tortilla Chips, (7 chip)
Tips
Please note adding salt to beans while boiling allows the flavor to be enhanced. Once beans are boiled adding salt will not bring back the flavor. (Note unsalted beans taste really different then what most people are used to. Once again its optional however I don't recommend it.
Directions
Note: Beans and rice can be cooked in advance to save time.)
Boil beans in water until tender (45mins). *optional add salt to water as you boil your beans. ( to save time Boil a few cups of beans at a time you can always package extra and freeze for a later date)
Steam brown rice.
Mix beans and rice together in bowl and top with Salsa and plain yogurt. Last but not least sprinkle with chopped cilantro.
