1. Shortening, .25 cup
2. Applesauce, unsweetened, .25 cup
3. Granulated Sugar, .5 cup
4. Egg substitute, liquid (Egg Beaters), .5 cup
5. Molasses, .33 cup
6. Flour, whole grain, 1.75 cup
7. Baking Soda, 1 tsp
8. Salt, 1 tsp
9. Cinnamon, ground, 1 tsp
10. Quaker Oats Old-Fashioned Rolled Oats, 2 cup
11. Walnuts, 1 cup pieces or chips
12, Cranberries, dried, sweetened (craisins), 1 cup
Tips
Freeze these cookies into packages of two cookies each. Take out one package at a time and thaw for approimately 10 - 15 seconds in the microwave. This allows for portion control and the cookies are out of sight until you choose to have them.
Directions
*Mix the first five ingredients (#1-5) together
thoroughly.
*Then in a sifter add the next four ingredients (#6-9).
*Sift into the first five ingredients and mix thoroughly.
*Add the last three ingredients and mix it all together.
Drop by 1 1/2 T scoops on to parchment paper covered cookie sheet. Baked for 10-11 minutes at 400 degrees.
Serving Size: This reecipe makes 32 cookies using a 1 1/2 Tablespoon scoop per cookie.
