Ingredients

    2 beaten eggs
    3/4 c. milk
    1 c. oatmeal or dry bread crumbs
    1/2 c. chopped sweet onion
    2 T. snipped fresh parsley or equivalent dry
    1 tsp. salt
    1/2 tsp. dried sage, basin, or oregano
    1 lb. ground beaf
    1/2 c. barbecue sauce

Tips

Since it's just my husband and me, I bake 6 and freeze 4 for another two meals. Good size to place between hamburger bun or kaiser roll for meatloaf sandwich sandwiches.


Directions

Combine eggs and milk; stir in oatmeal, onion, parsley, salt, oregano and 1/8 tsp. black pepper. Add meat and m ix well. Spoon mixture into 6-muffin pan. Bake in 350 degree oven for 40 minutes or until internal temp is 160 degrees. Spoon off fat and spread top of each mini meatloaf with barbecue sauce. Bake for 5-10 minutes more. Let stand 5 minutes before serving.

Serving Size: Makes 6 mini meatloaves (use large muffin tin)
