Introduction

Wonderfully scented rice pudding made using health concious ingredients. Only 140 calories per portion! Wonderfully scented rice pudding made using health concious ingredients. Only 140 calories per portion!
Number of Servings: 4

Ingredients

    500ml Skimmed milk
    200g Coconut milk
    100g Basmati rice
    60ml Orange Juice
    Zest of 1 orange
    1 Tsp ground cinnamon
    60g Caster sugar
    Orange zest or cinnamon to decorate

Tips

Sprinkle some chopped pistachios over the top for some extra indulgence.


Directions

-Combine all the ingredients in a saucepan and heat on a medium to high heat to bring to the boil.
-Then set the heat to low and allow to simmer for 40-50 minutes until mixture thickens and rice has absorbed.
-Leave to settle for 5 minutes and serve warm decorated with orange zest or cinnamon.
