Ingredients

.25 c cheddar cheese, diced small
2 large fresh eggs, beaten
2 strips bacon cut into small pieces
.25 c green bell peppers, chopped small
.25 onion, chopped small
Tips
Can be served with grits and/or fruit if desired.
Directions
Saute bacon, green pepper and onions till bacon is crisp and peppers and onions are tender. Remove from pan. Add eggs to pan in thin layer being sure that most all liquid is cooked. Add bacon, bell pepper, and onion mixture. Add cheese. Turn eggs over onto filling. Slide out onto plate making sure edges of omlette is underneath.
